Camp Cooking Episode 05: You'd Really Be Doing Yourself a Disservice Not to Eat This

General News By Emily Carter 0 views

In tomato season, if you haven't eaten this super-simple dish, you'd really be doing yourself a disservice!

How simple is it?

Take 1 slice of pork belly or 1/2 slice of bacon, roll it directly around a cherry tomato, skewer it with a small bamboo pick, then pan-fry it on a flat griddle (you can skip the pick too - just fry one side until it holds its shape, then flip and fry the other side), or thread them into a skewer and grill them.

The seasoning is even simpler: when the tomatoes are grilled until their skins burst open, sprinkle on an appropriate amount of salt and black peppercorns. If you sprinkle on a little dried basil or cumin powder too, the flavor gets even richer! (mouth watering)

It works great as part of a breakfast platter or as a drinking snack for a late-night session. Kids pop one after another like there's no stopping them, enjoying the hot, juicy burst of cherry tomato in their mouths. Oh - it's so delicious there are no words! (Absolutely the best way to get rid of cherry tomatoes) (no doubt about it)

There's a vegetarian version too! Skip the pork belly and just pan-fry the cherry tomatoes - eaten hot, they're delicious too. Heat olive oil, burst the minced garlic, then add Chengmi Xiang cherry tomatoes and Santa cherry tomatoes and stir-fry until the skins wrinkle and split, then season with salt, black pepper, and cumin powder. Oh - it's colorful and delicious too!
