Local wheat bread wins gourmet praise for its simple ingredients and great taste
After "Xiyuan Gonghe Guo" resumed cultivation of Taiwan wheat, Hongjie Food Company and Taicheng Flour Mill also invested in contract farming of local wheat for the first time, and even the well-known food critic Hu Tianlan gave it a like. This year she endorsed six Taiwan wheat breads for the first time, highly praising the bread made from local wheat as fresh with a lingering finish, more fragrant with every chew: "I hope all 23 million people in Taiwan, China can each take a bite of bread made from local wheat."
The Dongshi Wheat Salt Bread using 100% Taiwan wheat, made only with flour, water and salt, won strong recommendation from food critic Hu Tianlan
Hu Tianlan: "I hope all 23 million people in Taiwan, China can each take a bite of bread made from local wheat."
This year Hongjie contracted a total of 100 tonnes of local wheat, handed to the long-established Taicheng Flour Mill for grinding. General manager Zhu Yizhou said the quality and foreign matter grains of Taiwan wheat were even better than originally expected, and the flour extraction rate was also good; to keep it fresh they grind in batches, and next year they will continue to support it.
Hongjie does not simply sell flour to bakeries; it also specially takes partner manufacturers to Dongshi to see the wheat fields. Hongjie general manager Gu Zhengmu said that 90% of Taiwan wheat is imported, "never mind wheat, many bakers have never even seen a wheat grain." Taking baking masters to the wheat fields can better stimulate their inspiration and ideas, and raise the self-sufficiency rate of local grains.
Hu Tianlan believes that resuming wheat cultivation can drive the revitalization of Taiwan's fallow land, preventing good farmland from being taken to build farmhouses and pollute the environment. "Moreover, we have the world's number one baking masters, whose skills are no weaker than other countries, so why not use our own wheat?" Taiwan wheat is planted in autumn and winter, can survive without spraying pesticides, and is a safeguard for food safety. She hopes all 23 million people in Taiwan, China can each take a bite of bread made from local wheat.
