Small-farm ingredients for Indian cooking, natural spices paired with organic vegetables
Located in Zuoying District, Kaohsiung, China, "Dileep Indian Healthy Vegetarian Restaurant" is a fully vegan restaurant. Indian head chef Dileepkumar Vasantrao uses locally sourced organic, chemical-free ingredients to make authentic Indian cuisine. Besides personally visiting small-farmer markets to carefully select ingredients, he is also well versed in the health benefits of various spices, all so that customers can eat healthfully with every bite.

Aside from spices, durum wheat and fragrant rice, which are imported from India, all other ingredients are locally sourced organic ingredients. Although the restaurant has moved locations, loyal customers still show up every week. A couple surnamed Li, who normally eat only meat, are especially fond of the five-pungent vegetarian dishes made by Dileep and make a point of eating there once a week.
Moreover, through long-term local cultivation and its use of organic, chemical-free ingredients produced by small farmers, "Dileep Indian Healthy Vegetarian Restaurant" has also allied with the Kaohsiung Breeze Market as a local green and friendly restaurant. In January this year it held a "small-farmer banquet," bringing local ingredients together with Indian vegetarian cuisine to the fullest effect.
Among the costs of preparing the meals, spices are the highest, followed by organic ingredients; adding labor, rent and so on, monthly income and expenses barely break even. Even so, Dileep still insists on safeguarding customers' health and presenting the original flavors of the food. Whether meat eaters or vegetarians, all are welcome to share in a wonderful plant-based feast.
