Liquid green gold functional beverage made from edamame: highly nutritious, long shelf life, value-added use for tens of thousands of tonnes of off-grade product

Edamame can also be drunk! Taiwan, China's "green gold" edamame is selling briskly overseas, generating billions in output value every year, and now there is an innovative way to enjoy it. The Kaohsiung District Agricultural Research and Extension Station has turned off-grade edamame into a "edamame plant drink." The dried edamame powder just needs to be mixed with water to drink, and its protein and dietary fiber are higher than eating edamame kernels alone. It is very suitable for breakfast and can replace milk.

Last year (2019), edamame export value hit a 29-year high, yet about 40% of edamame is off-grade product, which in the past could only be sold as edamame kernels and could not fetch a higher price. Made into edamame plant drink, it is expected to consume 2% of off-grade product in the next 5 years, creating an additional 100 million yuan in edamame output value.
