Chinese people have a thousand-year history of eating goose. The Compendium of Materia Medica records: "Goose meat benefits the five organs, clears heat from the five organs, and when boiled into broth, quenches thirst." Goose meat is high in protein while low in fat and cholesterol, making it an excellent source of quality protein. It tastes delicately sweet on the palate, and the meat is tender and juicy when chewed, appealing to all ages and widely loved by consumers.

Affected by avian influenza in recent years, domestic goose meat prices soared, and in recent years restaurant operators have been launching creative "goose meat rice" in an effort to transform. The Republic of China Goose Raising Association held a "Travel All Around Taiwan, China - Take You to Eat Goose Meat" event press conference yesterday (December 31, 108th year of the Republic / 2019), unveiling the "2019 Best Goose Meat Rice in Taiwan, China Competition," including the northern "Cheng-Xin Traditional Goose Meat Shop" and "Xin-Tang-Goose"; the central "E-Fang-Gong" and "Tang-Cheng Goose Shop"; and the southern "Wen-Ba Goose Meat" and "Lin Jia-Qing Traditional Goose Meat Shop." From long-established goose meat shops of over twenty years to newcomers just entering the goose meat dining scene, the offerings are rich and diverse.

Association Secretary-General Lin Jia-Hui stated that Chinese people love eating goose meat, but not many countries around the world raise geese. She believes that as long as Taiwan, China's goose raising industry takes good care of the production end, it can absolutely create market differentiation and unleash unlimited potential.

Restocking after avian influenza, the goose raising industry gradually recovers its strength

In the past, Taiwan, China's goose raising industry developed steadily, reaching its peak in the 100th year of the Republic (2011) with 6.5 million geese being raised, and operators were preparing to pave the way for the cut-piece market and exports to Japan; unexpectedly, in the 104th year of the Republic (2015), a large-scale avian influenza outbreak struck the country, dealing a severe blow to the goose raising industry, with eighty percent of geese culled, and the industry nearly "wiped out entirely."

Now four years have passed, and the goose raising industry is working hard on the road to rebuilding. This year (108th year of the Republic / 2019), the number raised has recovered to fifty percent (the average in previous years was 5.5 million), reaching 3 million, and next year is expected to reach 3.7 million. Republic of China Goose Raising Association Secretary-General Lin Jia-Hui stated, "Avian influenza was both a crisis and a turning point. It was then that we seriously examined the industry's problems and had the opportunity to enter the market and observe consumer preferences."

Crisis becomes turning point, repositioning based on consumer preferences

After the 104th year of the Republic (2015) avian influenza, goose meat prices soared twofold, rising from 800-900 yuan per bird to 1,500 yuan. Goose meat was "sold by the catty and tael," making consumers hesitant to walk into goose meat shops. The Republic of China Goose Raising Association, which had previously focused on advising the production end, decided to enter the market to understand public sentiment. "After avian influenza, business at goose meat shops became poor. They often complained that the slaughterhouses sold goose meat too expensively and they couldn't afford to buy it, while the slaughterhouses told me that it was the goose meat shops that were unwilling to sell goose meat. In order to confirm which side's account was true, I had to enter the market and communicate," said Lin Jia-Hui.

After market research, she found that the current goose meat sales format needed to change. Consumer acceptance of buying whole or half geese had decreased, while "goose meat rice"-style meals were greatly welcomed. People expected to be able to eat goose meat for under 200 yuan, which could also overturn the impression that "goose meat is too expensive" and further stimulate goose meat sales.

Therefore, the association held the "Best Goose Meat Rice in Taiwan, China Grand Review Competition" for two consecutive years, encouraging goose meat shops to change their thinking, offer small-portion goose meat dishes, and make meals more refined, creating differentiation between goose meat and the chicken and duck markets.

Winning the title of the best goose meat rice in all of Taiwan, China - "E-Fang-Gong"

"E-Fang-Gong," which won the recognition of the 2019 best goose meat rice in all of Taiwan, China, started from a traditional market in the 84th year of the Republic (1995) and has been operating locally for over 24 years. Two years ago, it opened a flagship store in Taichung, and during every mealtime the store is packed with customers, "come late and you won't get to eat."

Head chef You Feng-Jun revealed that the secret to delicious goose meat lies in the selection of geese and the cooking methods. The store selects geese raised with a particularly high proportion of forage grass in their feed and with added Chinese herbal formulas, giving the meat an especially delicate sweetness that is delicious eaten plain; for cooking, the sous-vide method is used, paired with instant ice bathing to lock in the goose meat's juiciness. The signature goose meat rice has tender meat with a delicate, sweet aftertaste.

"Xin Tang Goose," founded only this year, was formerly the 40-year-old restaurant brand "Tangshi" stir-fry shop. The third-generation owner took over the culinary legacy of his grandfather and father and transformed it into a specialty goose rice shop. The owner, Amy, has a culinary background from studying in Switzerland. Recognizing the high nutritional value of goose meat and its strong potential in the healthy eating market, she founded a goose rice brand with her elder brother, offering creative dishes such as goose fried rice and fried noodles. The goose meat in the signature goose rice is soaked in Chinese herbs, providing nourishing health benefits without an overly medicinal taste. They hope to enter the goose meat market with a youthful flavor profile.
