The Cameo apple is a very new apple variety. Its shape is very reminiscent of Red Delicious, but the Cameo apple does not haveRed Delicious's intense red color. From essentially dark red red apples to pale green apples with an orange flush, the color truly varies greatly.

Unlike most modern apples, the Cameo apple is not the result of a long-term breeding program. It originated from an old-fashioned chance seedling. Interestingly, it was found in a Red Delicious orchard, so given the shape and color, it seemsRed Deliciousis one of its parents.

The flavor is rather bland, with a hint of pear - similar toRed Delicious, but less intense. It is a bit crisper thanRed Delicious, but still fairly soft.

Cameo apples contain no sodium and no cholesterol, are rich in soluble fiber, and have been shown to promote a healthy cardiovascular system. They also contain a considerable amount of potassium and vitamin C as well as some iron, vitamin A and calcium. Recent research on the newest apple varieties conducted at the University of Bonn showed that among the thirty-one apples studied, they contained the most antioxidants.

Uses:Cameo apples can be used in both sweet and savory applications. Their resistance to browning when cut makes them an apple for fresh preparations, such as sandwiches, salads, edible garnishes or cheese boards. The sweetness of Cameo apples is enhanced in cooked preparations. Add chopped Cameo to quiches, polenta and cobblers. Their dense flesh holds up very well when cooked. Try topping a pizza with sliced Cameo, using it as a filling for pastries, or hollowing it out to make baked apples. Cameo apples pair very well with pumpkin, bacon, pear and savory cheeses such as goat, cheddar and ricotta.
