Have you ever eaten fried milk?

*Crispy Fried Fresh Milk*

1. 250g milk, 30g cornstarch, 25g white sugar (adjust to taste), a little condensed milk (optional). Mix well, put into a pot, heat over low heat, and stir constantly until thick.

2. Find a rectangular container and coat it with a layer of oil. Pour in the milk mixture, let it cool, then refrigerate for one hour until it sets into milk pudding. (After cooling and setting, the milk pudding is very smooth and a bit bouncy; the picture below shows it before cooling.)

3. Cut the milk pudding into strips and roll each one in a circle of cake flour. (The version I made also coats them with a layer of egg wash and rolls them in a circle of breadcrumbs on this basis; the egg wash and breadcrumbs can also be omitted.)

4. When the oil in the wok is 60% hot, turn to low heat, add the milk pudding strips, and fry until golden brown.

After the cooling and setting in "Step 2" above, cut the milk pudding into pieces and roll each one in a circle of shredded coconut.
