China Successfully Solves the Problem That Green Tea Cannot Be Stored for Long
Science and Technology Daily (Hu Lijuan) - The problem that green tea cannot be stored for long has now been successfully solved. This is the aged tea production technology developed from green tea as a raw material through a post-ripening process; it has the characteristics of being stable, resistant to storage and improving flavor, and the product has been tested by the Tea Quality Supervision and Inspection Testing Center of the Ministry of Agriculture and found to comply with the relevant national standards. This was learned recently at the scientific and technological achievement release conference for the "Furuixiang Aged Tea Production Technology" project held in Beijing.
It is understood that this aged tea production technology uses green teas such as Longjing and Biluochun as raw materials, which are evenly mixed in proportion and dried, then sealed, kept away from light and stacked in a constant-temperature room for more than 5 years so that an oxidation reaction occurs. This not only reduces the pesticide residues in the original tea leaves, but also slightly increases tea polyphenols, free amino acids and caffeine, thereby effectively improving tea quality.
Professor Song Yuan of China Agricultural University said that the aged tea production technology, which has independent intellectual property rights and uses green tea as a raw material, has reached the domestic leading level and has broad application prospects.
