In summer and autumn, after the tide recedes, across the vast intertidal zone, women in twos and threes seem to wander casually, yet all the while they open eyes sharpened by wind and frost. In what looks like a boundless desert, they search for their prey. (Shiju, a kind of bottom-dwelling octopus.) When the catch is plentiful, each woman can catch more than ten jin of octopus. Add to that those caught by diving and those lured by fake bait. Loads of octopus, in the early days before refrigerators, could only be preserved in the most primitive way: sun-dried.

The sun-drying process. With nimble hands, the women clean out the innards from the octopus head in one go. That is the first step completed. The second step is to split the octopus head open from the middle. The ball-shaped head is opened into a round flat shape, and the prep work is done. Next comes the sun-drying step. What looks like a simple job requires the octopus legs to be arranged into a shape like upturned handlebar mustaches. Then they are laid out in order on the drying net. They undergo the sublimation of wind and sunlight. After being turned over repeatedly, over several days, the ruby-like reddish-brown dried shiju becomes an indispensable ingredient for the people of Penghu when entertaining guests or cooking everyday meals.

  1. Soak the dried octopus in water and slice it, wash the garlic and cut it diagonally into sections, wash the dried tofu and cut it into pieces, wash the pork ribs, pour 200cc of water into a pot (mainly enough to cover the Penghu pork ribs for blanching), and after the water comes to a boil, add the pork ribs (to remove the dirty blood water and wash them clean), set aside.

  2. Pour 1000cc of water into a pot. After the water comes to a boil, first add the pork ribs, turn to low heat and cook until soft and tender, cover with the lid, and let it boil for about 20-30 minutes. Then lift the lid to see whether the Penghu pork ribs have turned milky white and whether they have become slightly tender and cooked. Heat a wok, pour in olive oil, then add the five-spice dried tofu and stir-fry until fragrant for about 1 minute. When the aroma comes out, switch to medium-low heat, add the dried octopus, a little soy sauce and salt in order, and stir-fry evenly.
  3. Next, pour the 1000cc pot of stewed pork rib broth into the wok and stir-fry together quickly. Finally, add the garlic (be careful not to blanch it too long, so it does not oxidize and turn yellow), then it can be served in a bowl and enjoyed - Grandma's home-style dish, "Dried Octopus Pork Rib Soup."
