Cucumber Soy Sauce Crisp Melon Parent-Child DIY Teaching Activity!
The blackness of soy sauce mostly comes from caramel coloring; the color actually produced by brewing leans toward strong tea color. Some large manufacturers simplify the traditional brewing process for output, and the products they produce lack both color and aroma, hence many additives. "Jiangzi" white-brewed pot-bottom oil uses organic black beans, natural lake salt, and organic cane sugar, sun-dried for a hundred days using the traditional method, producing white probiotics that decompose the beans. Co-founder Cai Mingxun states that because it contains no additives, it will not spoil even after 3 years. The pot-bottom fermented black beans made by traditional fermentation show wine-red colored bean grains with a soft aroma.
Besides soy sauce, the peanut oil uses hand-selected native smaller-grain varieties, giving fuller aroma. The black sesame oil selects top-grade KK-grade white-hearted black sesame seeds, low-temperature cold-roasted, giving higher oil purity. The camellia seed oil uses small-fruit camellia seeds from Xinyi Township; its monounsaturated fatty acid content surpasses that of olive oil, and its smoke point is at 252°C, suitable for stir-frying. All "Jiangzi" oils use the cold-press extraction method, which preserves more nutrients.
