The yellow peach is a peculiar fruit. The vast majority of people have only ever eaten it from a can, and the occasional fresh yellow peach they do try turns out to be sour... But! Last week, the editor ate a yellow peach from the high mountains and couldn't stop marveling at why he hadn't met it sooner! This sweet, fragrant yellow peach is 10,000 times better than canned ones!

Before it even reaches your mouth, a subtle peach fragrance greets you, like a morning breeze carrying fresh scent rushing toward your face. You can't resist taking a gentle bite, and the rich peach aroma can no longer be concealed, like a tornado sweeping across your palate. Chew carefully a few more times, and the sweet-and-sour note hidden beneath the dense peach fragrance emerges again. That's right, it's not just plain sweetness. A peach that is foolishly sweet all on its own gets cloying after just a couple of bites, with a sour note to balance it, it's sweet and tangy, like a seamless combination of punches, creating distinct layers and rich flavors, then all blending silently into the peach fragrance, becoming a lingering aftertaste that stays in your mouth. Take a deep breath, and even the air is tinged with the sweet scent of yellow peach. So it turns out eating a peach can be this blissful o(* ̄ ̄*)o

Why have 80% of people only eaten yellow peaches from a can?

/ Sweet, sweet yellow peaches are extremely rare/

Before the editor had ever tried a fresh yellow peach, he once assumed that yellow peaches were a variety meant specifically for canning, after all, yellow peaches hold up half the canning world. The reason syrup-packed peach cans use yellow peaches is actually that most yellow peaches are too sour, and simply can't be eaten without processing, only a small portion of yellow peaches have been bred into sweet varieties that can be eaten fresh. Take the Jinxiu yellow peach that many people have heard of, its standout characteristic is its sweetness. But this timethe high-mountain yellow peach the editor found is more than one degree sweeter than the Jinxiu yellow peaches grown in the Jiangsu-Zhejiang-Shanghai region(proud face).

The sugar content of Jinxiu yellow peaches averages 11%-14%, while thehigh-mountain yellow peaches we found reach a sugar content of 16%-18%. You should know that common peaches have a sugar content range of only about 9%-12%, and the sugar content of high-mountain yellow peachesis already close to that of lychees! These figures translate directly into high-mountain yellow peaches tasting especially sweet. This sweetness isn't plain cloying sweetness, but one balanced with the peach's distinctive aroma. One bite leaves fragrance on the palate, and you can't help taking a second and third bite...

Beautiful and delicious

/ A colorful temptation, with a smooth, tender texture/

As a fruit, the peach has been cultivated by humans for thousands of years, giving rise to varieties of different colors. Those with lots of anthocyanins are red-fleshed peaches, those that accumulate large amounts of carotenoids are yellow-fleshed peaches, and those with little of either anthocyanins or carotenoids are white peaches. But these pigments are not necessarily mutually exclusive in a peach. For example, the flesh of the high-mountain yellow peach is made up of both yellow and red colors, and the closer to the pit, the redder it gets, yet the flavor loses nothing. The area near the pit is just as flavorful. The more you get to know it, the more lovable it becomes. It's perfect for gatherings with close friends and for posting on social media.

A touch of red within the yellow adds an extra allure

The texture of high-mountain yellow peaches is also different from common peaches. It has afirm, silky, meaty texture, worlds apart from the seemingly soggy texture of canned ones. The firm yet slightly supple texture of high-mountain yellow peach flesh doesn't require much effort to bite through. It's neither too soft nor too hard, just right, a feeling other peach varieties simply can't give.

Peaches from the high mountains taste better

/ There are also fewer peaches from the high mountains/

The high-mountain yellow peach was originally the Jinxiu yellow peach introduced from Shanghai to the Yimeng Mountain area in the 1980s. After years of cultivation, it has formed its own improved line, andthe Yimeng Mountain areahas four distinct seasons and fertile soil, with longer sunshine hours than the Jiangsu-Zhejiang-Shanghai region, ample sunlight, and a large temperature difference between day and night. The high-mountain yellow peaches it produces accumulate more flavor compounds and have higher sweetness, which is why they taste better.
