After the Start of Autumn, drink 3 soups to clear dampness and replenish blood and qi, and sleep soundly until dawn
Lotus Root and Pig Trotter Soup
The elders at home often say that after the Start of Autumn you should eat some "white foods" to clear away the summer's internal heat. Lotus root is one of these "white foods," and it also happens to be a fresh seasonal vegetable. Stewing it into a pig trotter soup not only clears heat and removes dampness, but also beautifies and replenishes blood and qi~
Method:
1. Blanch the pig trotters in cold water
Shave the hair off fresh pig trotters and clean them thoroughly, chop them into small pieces 3-5 cm long, put them in a pot of cold water and blanch them, keeping it on high heat until the water boils, until the blood water in the pig trotters is blanched out. The process takes about 5 minutes.
2. Prepare the lotus root, scallions and ginger
For lotus root, generally choose the starchy kind, which stews to a soft and glutinous texture and tastes better. When buying, pay attention to selecting lotus root joints with a darker color and the thickest segments; these are generally the starchy kind. Cut the lotus root into medium-sized chunks, and prepare the ginger and scallions.
3. Rinse the pig trotters after blanching
After blanching, rinse the pig trotters under the tap to clean off the foam sticking to the meat.
4. Put into the stewing pot
A pressure cooker, clay pot, or multi-function electric pot can all be used for cooking. First place ginger slices and 2-3 scallions at the bottom of the pot; if you like strong flavors, you can add star anise and chili pieces. Then add the pig trotters, add clean water, about 5-10 cm above the ingredients, and it is ready for making soup.
5. Stew over heat
Using an electric pot is more convenient; just add the lotus root in the last 40-30 minutes. For a clay pot on a stove, first bring to a boil over high heat, turn to medium-low heat for 20 minutes, then add the lotus root, and cook for a final 20 minutes to finish. Using a pressure cooker is more troublesome; it is recommended to cut the lotus root into large chunks and put them in together, then after bringing up to pressure over high heat, turn to medium-low heat and pressure-cook for 20 minutes and it is done.
6. Little tips
Besides lotus root, you can also add corn and peanuts to replenish qi. Before stewing meat, be sure to add enough water, and try not to add water midway, so as to preserve the original flavor of the broth. If the soup boils dry, it is best to add boiling water. This is Huahua's experience~
Double Red Pumpkin Blood-Nourishing Soup
Pumpkin is a good thing; its nature is mild and it nourishes the spleen. Add sweet potato and red dates to replenish blood and qi and nourish the spirit. It is suitable for women, the elderly, and children. Moreover, this soup is simple and convenient, can be made every day, and is easily done!
Method:
1. Prepare the ingredients
Cut the pumpkin and sweet potato into chunks 2-3 cm thick, and soak the red dates in warm water for about 20 minutes.
2. Cook the soup
First put water in the pot, add 20 g of rock sugar (according to personal preference) and the red dates. After it comes to a boil, add the pumpkin and diced sweet potato, bring to a boil again over high heat, then turn to low heat for 10-20 minutes, and it is done once cooked soft.
3. Little tips
Double red pumpkin soup is very suitable to eat as porridge. For flower lovers who also want to save time and fuel, you can cut the pumpkin and sweet potato smaller, so they cook through faster~
Glehnia and Lily Lung-Moistening Soup
At the transition between summer and autumn, when internal heat is strong, appetite is poor, and you have no energy, you must drink some soup that moistens the lungs and nourishes the stomach. Glehnia and lily are an excellent health-preserving pairing, and you can freely pair them with figs, goji berries, coix seed, lotus seeds, meat... either sweet or savory is fine!
Method:
1. Prepare the ingredients
These medicinal-food ingredients can now be bought in the supermarket. Weigh out a little and it is enough for several meals; after all, the nutrition that is cooked out is all in the soup.
2. Blanch the ingredients
Some flower lovers may find these things taste a little strange. Huahua has tested it: you can first boil them in a round of water to filter out the sourness, and then there is no strange taste left~
3. Cook a second time
First boil a kettle of hot water, then use boiling water with the ingredients and cook for 30 minutes. The resulting soup is transparent and lightly sweet. You can also add some coix seed, red dates, lotus seeds, etc. according to personal preference, and you can also add hen, duck meat, or pork bones to cook.
4. Little tips
If you are going to cook it with meat, you can add some orange peel for a fresher, more delicious taste, and the meat becomes more tender too.
