Gardenias like moist soil and high air humidity, and the potting soil must be kept moist. When the surface of the potting soil is dry, water it thoroughly right away. If you don't water for a long time, its leaves will wilt and can't perk up, and if it keeps going without water like this, there's no way it won't drop leaves.
Another situation is that its root system has rotted and its absorption function has declined. The roots can't absorb water, so all its leaves wilt. If this is the case, you need to repot it with fresh soil. When repotting, check its roots, cut off all the rotted parts, soak them in mancozeb diluted with water, and replant in new soil.
I don't know how long your gardenia has gone without water. The potting soil looks very dry, and the main cause is lack of water. Just go and water it thoroughly right now. By tomorrow, if the leaves have a bit more vigor, that proves it's recovering. Over several days, its leaves will gradually regain vigor and stand up.
