Q: What varieties of Western celery (celery) are currently common on the market?

A: Western celery is also known as celery. At present, the price of celery on the market is relatively high. Common Western celery falls into three major types: yellow varieties, green varieties, and hybrid varieties:

1. Yellow varieties. Stems and leaves are light green, leaf stalks are wide, flesh is thin, fiber content is relatively high, and they soften easily, become hollow early, are sensitive to low temperatures, and bolt early. Main varieties include Golden Self-Blanching, Golden Feather, and others.

2. Green varieties. Stems and leaves are deep green, stalks are round, flesh is thick, fiber is sparse, bolting is late, stress tolerance and disease resistance are strong, the maturation period is late, and they do not soften easily. Among the varieties, the Jewish-bred varieties are the most famous.

3. Hybrid varieties. These are hybrids of yellow varieties and green varieties, combining the advantages of the yellow varieties' early maturity and easy softening, with green leaves, slightly round stalks, thick flesh, and little fiber. Varieties include Cornell 19, which bolts early and has strong heat tolerance; Cornell 619, which has few hollow stalks and bolts late; and others.
