Processing workflow and technical key points for jellyfish head
Processing technology for jellyfish head
(1) Main processing steps: 1. Rinse the jellyfish heads cut off with bamboo strips in seawater to remove dirty blood, add 0.8% alum powder and soak for about 3 hours. 2. Let the first-alum jellyfish heads drain bloody water for about 1 hour, then add 10% salt and 0.3% alum, mix well, and cure while drawing out brine for about 7 days. 3. Place the second-alum jellyfish heads in a basket, drain the brine, add 8% salt and 0.15% alum powder, mix well, and cure while drawing out brine for 10 days. 4. Place the third-alum jellyfish heads in a basket to drain, cure with 15% salt, and wait for transfer out of the tank.
(2) Quality requirements for jellyfish head
All grades are commonly required to be white, yellowish brown, or red amber in color, with thick flesh, toughness, and crispness, free of sand and mud, and free of off-odors; moisture content not exceeding 68%, salt content 18%-25%, alum content 1.2%-2.2%, and boric acid or borax must not be used as a preservative.
Grade 1: each piece weighs more than 350 g, the piece shape is intact, and there are no jellyfish tentacles.
Grade 2: each piece weighs more than 150 g, the piece shape is basically intact, incomplete pieces are allowed, and there are no jellyfish tentacles.
Grade 3: there is no limit on the weight of each piece; single lobes or two or more lobes connected together.
