Veal Production
Veal production refers to raising calves from birth to 6 to 8 months of age, fattening them under special feeding conditions until they reach 250 to 350 kg, and then slaughtering them. Veal has a unique flavor and is expensive. Under the conditions currently available in China, for veal production, it is advisable to mainly select male Holstein dairy calves, taking advantage of their rapid early growth and development, which makes production organization easier. It is also possible to select crossbred male calves of Simmental cattle of the third generation or above for fattening, and the calf's birth weight is required to be greater than 35 kg.
