For those of you who love eating raw fish in the hot summer, pay attention - you must be careful about liver fluke infection.

Liver fluke disease is also known as clonorchiasis. The adult worms parasitize the bile ducts of the human liver. It is caused by eating raw or undercooked freshwater fish or shrimp. Generally, people in Guangdong, Guangxi and other places have the highest risk of liver fluke infection. Recently, Mr. Zhu from Guangdong went to the hospital for examination because of persistent abdominal pain. The doctor found that his liver actually harbored hundreds of small worms nearly two centimeters long.

Mr. Zhu admitted that he usually had the habit of eating raw fish, and that the infection with this liver fluke disease might be related to that habit.

Raw fish is rich in nutrients and delicious, and is loved by many people. However, since raw fish may contain many parasites, especially freshwater fish, whether to eat raw fish has sparked heated discussion. Many people believe that as long as raw fish is properly disinfected, there is no need to worry about parasites at all when eating it. So, is that really the case? Today let us find out!

Common disinfection measures include wasabi, vinegar, high-proof liquor and so on, but these disinfection measures can hardly kill the parasites in raw fish. Take the liver fluke as an example: liver flukes often parasitize freshwater fish, and the larvae have a protective cyst wall and strong vitality. Although the examination and treatment of liver fluke disease are relatively simple, and liver flukes do not roam all over the body but only stay in the biliary tract, if not treated in time, they will gradually cause cirrhosis. Simply dipping in white liquor or wasabi cannot kill the eggs, and may even fail to destroy their cyst walls.

Are farmed fish safer than wild fish? Whether wild or domestic fish, both may contain parasites. Studies have proven that both domestic and wild swamp eels may carry gnathostoma larvae. When a person eats fish carrying gnathostoma larvae, they will bounce around inside the human body like a headless fly, seriously harming health. It is not only eating raw fish that easily "brings worms upon yourself" - shrimp, shellfish, pork and so on may all contain parasites, and different types of meat carry different parasites. Almost all mammals and birds can transmit Toxoplasma, and the main source of human infection comes from the meat of these animals. For example, if the temperature for rinsing mutton in hot pot is not high enough or the time is too short, parasites may remain.

How to prevent parasites?

Parasites are different from bacterial infections. The symptoms of bacterial infection are acute, with acute symptoms such as vomiting and diarrhea, and a short reaction cycle. But after parasites are ingested, there are often no symptoms at first. Parasites must go through stages such as laying eggs, hatching and growing inside the human body, and the whole process is relatively long. For example, the adult liver fluke can survive in the human body for 20-30 years. Because many parasitic infections have no symptoms at first, or only mild symptoms that are hard to notice, by the time symptoms appear the situation is generally quite serious. Therefore, the best way to prevent parasites is still to avoid "illness entering through the mouth."

Therefore, when eating meat or some aquatic plants, try to do the following:

1. Cook thoroughly and boil thoroughly, using high temperature to kill parasites.

2. Do not drink unboiled water or dirty water.

3. Develop the habit of categorizing cutting boards, using different cutting boards for different foods, especially keeping raw and cooked separate, to prevent cross-infection.

4. Diners who have the habit of eating raw meat or raw aquatic plants should have regular checkups and deworm 1-2 times a year.

Parasites are not far from us. In fact, in daily life, parasites are not far from us. For example, sparganosis caused by eating raw frogs, malaria parasite infection in patients who return from Africa with fever, angiostrongyliasis caused by eating golden apple snails, fascioliasis gigantica, and so on - parasitic infections are actually right around us. Therefore, we need to have correct awareness of protection, eat as little raw food as possible, pay attention to personal hygiene, and take personal protective measures when going to areas where parasitic diseases are common.

Thankfully I am poor and cannot afford raw fish, so I avoided a health incident. I hope everyone pays more attention to food hygiene.
