1. The technician in charge must know the ostrich's start-of-laying period; first prepare a fumigated and disinfected plastic bag or a clean towel.

2.  Notify the keeper to observe the birds in the start-of-laying period. Generally, about 10 days before laying begins, the male bird helps the female bird "scrape out a nest" in the pen;  the female often circles around the pit, her nostrils turn red, and on the day laying starts her feed intake decreases,  especially before laying, when the female walks back and forth in the pen, restless and agitated.  At this time the keeper should wash his hands thoroughly with disinfectant, prepare a plastic bag or towel,  and wait quietly in a place where the ostrich is not likely to notice him in order to observe. (Ostriches generally lay eggs at around 2 pm to 7 pm).

3. About 2 minutes before laying, the female will squat down, mucus flowing from her mouth, flapping both wings and making a trembling sound, and begin to lay.  At this moment the egg-catcher must immediately jog over lightly,  holding a towel in one hand to catch the egg while the other hand gently lifts the bird's tail feathers, to prevent the tail feathers from touching the egg and contaminating it.  When catching the egg, one should squat down to prevent the male bird from attacking you.

4. The egg caught is clean and damp,  the keeper should promptly deliver it to the hatching-egg fumigation room, where the incubator operator takes over to disinfect, file and store it.  Disinfection must be carried out only after the moisture on the egg surface has air-dried. (On rainy days use a plastic bag to catch the egg, to prevent contamination by rainwater).

5. When fumigating or storing bird eggs, place them with the air cell end facing up.  When the bird lays, the air cell end comes out first; when catching the egg one only needs to pay a little attention  and tell the incubator operator,  and catching the egg can solve the difficult problem of determining the direction of the air cell.
