This vegetable is called the egg eggplant, also known as the white egg eggplant. It looks like a white egg on the outside, but it actually belongs to the genus ornamental eggplant in the nightshade family. The egg eggplant plant grows vigorously with green leaves, and its fruits are small and round, turning white when mature. Grow one in a pot at home, and it is both tasty and attractive, bearing quite a lot of fruit too.

The egg eggplant is a first-generation hybrid variety introduced from the Netherlands. Its fruits are of good quality and high nutritional value, and it has strong drought resistance and disease resistance. It also has strong growth vigor and good fruiting ability; a well-grown plant can bear dozens of fruits.

When the egg eggplant fruit is unripe, it looks like a pigeon egg, small and white, with a relatively fresh and tender taste, and at this stage its nutritional value is at its highest. When it matures, it becomes the size of a chicken egg and is even more beautiful. Besides being picked for stir-frying, it can also serve as an ornamental potted plant.

It is propagated by seed, which can be done in all four seasons. Buy the seeds, soak them for a day before sowing, and with suitable temperatures they generally sprout within a week. When the seedlings grow to 4-5 true leaves, transplant them into pots. Choose a 30cm pot and plant 1 vigorous seedling per pot.

The egg eggplant likes warmth and is not cold-tolerant. It is not strict about soil quality, but deep, fertile soil with good water retention is preferable. It is not sensitive to day length, but the fruit still needs a certain amount of light to develop. During the growing period, water twice a day, in the morning and evening. In hot, dry weather, water 2-3 times a day, and in summer be sure to mist the leaves regularly.

The egg eggplant likes fertilizer. If you want a high yield, the base fertilizer must be sufficient. You can add some household mixed fertilizer, such as fermented and decomposed fish intestines and scales, animal hair, horns and blood residue and other scraps buried at the bottom. For regular topdressing, potassium fertilizer is the main choice, with a small amount of nitrogen and phosphorus fertilizer.

When grown in a pot, the harvest period of the egg eggplant can last several months. During the peak fruiting period, it can be harvested once every 2-3 days, so growing it in a pot at home gives you plenty to eat.
