How should Fuding white tea be selected for the best taste?

1. Observe the shape
Fuding white tea mainly has four grades: Baihao Yinzhen (Silver Needle), Baimudan (White Peony), Gongmei, and Shoumei.
The smaller the leaf shape, the better, and they are mainly composed of buds.
Baihao Yinzhen (Silver Needle): entirely buds.
Baimudan (White Peony): one bud and one leaf, or one bud with two or three leaves
Gongmei: fresh leaves
Shoumei: leaves
2. Look at the color
When Fuding white tea is first picked, it is not very different from green tea, mainly green or dark green.
The longer it is stored, the darker the color becomes, and dark green, brown, and dark brown will appear.
3. Smell the aroma
When the new Fuding white tea of the current year is smelled carefully, its aroma is relatively fresh, close to that of green tea, and if you smell it carefully you can also detect a grassy, astringent note. This is the result of components such as theophylline not being fully oxidized and fermented.
When Fuding white tea has been stored for 3-5 years, the aroma becomes increasingly mild, and a faint aged floral fragrance appears.
I myself have a habit, and I also recommend it to friends who drink tea long term: you can store more of it and place it in the study or living room. After a few months, a faint aroma will fill the room, which can calm the mind and make one feel peaceful and joyful.
4. Taste
Only at the last step do you reach the tasting stage.
The tea liquid of aged Fuding white tea is very thick and full-bodied, with a sense of weathering and steadiness. After three to five infusions, the natural flavor of the tea emerges, and this is the true taste of Fuding white tea.
