Yellow croaker, also known as yellow fish or flower yellow croaker, is divided into large yellow croaker and small yellow croaker, each being one of the four major marine fishery species in our country. As a valuable commercial fish, the large yellow croaker has long been favored by consumers, so how much is yellow croaker per jin? According to Hunan farmer Mr. Wang, small yellow croaker is priced between 7 and 10 yuan depending on its size, wild large yellow croaker costs 26 to 30 yuan per jin, and farmed ones are around 15 to 20 yuan.

1. Does yellow croaker have bones?

Yellow croaker does have fish bones, but not that many, and they are relatively concentrated in distribution. The yellow croaker has a flattened, elongated body and is golden yellow. The large yellow croaker has a slender tail peduncle, smaller scales, a body length of 40 to 50 cm, and 25 to 27 vertebrae; the small yellow croaker has a shorter tail peduncle, larger scales, a body length of about 20 cm, and 28 to 30 vertebrae.

2. Nutritional value of yellow croaker

Yellow croaker contains protein, fat, vitamins B1 and B2, niacin, calcium, phosphorus, iron, potassium, iodine, and other components. Its hydrolyzed protein contains relatively many amino acids, such as 17 kinds including lysine, leucine, tyrosine, alanine, arginine, and glutamic acid.

Yellow croaker has an antibacterial effect and stays fresh longer than other fish. Some fishermen once pasted raw yellow croaker meat on a wall together with other fish and found that the other fish meat rotted first, while the yellow croaker remained relatively fresh.

Yellow croaker not only has thick, crisp and tender flesh with a delicious taste and is easy to digest and absorb; its swim bladder, meat, and gallbladder can all be used to treat diseases.

The Compendium of Materia Medica records that yellow croaker is sweet in taste and neutral in nature, and has effects such as improving eyesight, calming the nerves, boosting qi, and strengthening the spleen and opening the appetite. Modern nutrition research has also found that yellow croaker has a relatively high protein content and is rich in fat, calcium, phosphorus, iron, iodine, and large amounts of omega—3 fatty acids, giving it relatively high medicinal value.

3. How to choose yellow croaker

1. More than 2/3 of the base of the fin rays of the dorsal fin and anal fin are covered with small cycloid scales. The fish scales are uniform in color, naturally yellow, golden yellow, glossy, and the scales are complete and not easy to fall off.

2. The eyeballs are full and protruding, the cornea is transparent, and the eyes are black and shiny.
