How to eat Chongming Qingshui Crab?
1. Crab is best steamed, not boiled. Crabs live at the bottom of the water, and their gill filaments contain sludge and impurities; if boiled in water, the sludge in the gill filaments will enter the abdominal cavity with the water, affecting the fresh flavor, and the soluble nutrients in the crab will also be lost with the water. Steaming crab cooks faster than boiling in water, and while quickly killing the parasites in the crab's body, it can preserve nutrients and fresh flavor to the greatest extent.
2. Braise Chongming crab together with rice cakes; the fresh flavor of the crab fully penetrates into the rice cakes, serving as both staple food and dish, sure to satisfy your appetite.
3. Steamed crab with salted pork. Cut salted pork into slices, cover the surface of the crab cut in half, add scallion, ginger and yellow rice wine, and steam in a pot for fifteen minutes; simple and easy to make, salty and fresh and delicious.
