1. Prepare ice cubes; first, ice water is needed for cooling, and second, ice is needed for serving the dish chilled;
2. Wash the geoduck clam clean and set boiling water aside;
3. Remove the geoduck clam from the shell; when removing it, remember to take off half the shell first, then the other half, and take it out whole;
4. Remove the internal organs. Then cut the siphon vertically down the middle.
5. Put the geoduck clam into boiling water for at most 10 seconds. After taking it out, begin peeling. Cut off the siphon, because the siphon part is anyway going to be prepared as sashimi, and the clam meat part is going to be prepared in superior broth. The siphon has a layer of thick yellow skin on the outside that needs to be removed;
6. After peeling, remember to immediately put the meat into ice water; only in this way can its crunchy texture be ensured.

Sauce-blasted Geoduck Clam
Ingredients: geoduck clam, green and red peppers, XO sauce, cooking wine, salt, white pepper, ginger, scallions, minced garlic, soy sauce, white sugar
Method:
1. Wash the green and red peppers, remove the seeds, and cut into thick shreds.

3. Preheat a wok over medium heat. Pour in vegetable oil, heat until 70 percent hot, add the geoduck clam slices and pass through the oil for 1 minute, remove, and drain off the oil.
4. Leave 3 tablespoons of oil in the original wok, add the shredded peppers, stir-fry for 2 minutes, and scoop out. Using the oil left in the wok, heat again, then add ginger, scallions, and minced garlic, and stir-fry for 30 seconds. Add XO sauce and stir-fry for 30 seconds. Add the oil-passed geoduck clam slices, soy sauce, and white sugar, and stir-fry evenly. Add the green peppers and red peppers, stir-fry evenly, and immediately scoop out and serve.
