Swimming crab, also known as sea crab or spear crab, is a common crab in coastal areas such as Fujian, Jiangsu and Hebei, and is deeply loved by people for its delicious taste and high nutritional value. It is now sold in markets, and the price is a little on the expensive side. So where do swimming crabs come from? What is the wholesale price per jin? How do you steam them?

1. Where do swimming crabs come from?

The swimming crab population is fairly widely distributed, both in China and abroad, and China is the largest exporter, mainly shipping to Japan, Korea and other places. In China, swimming crabs are mainly produced in coastal areas such as Fujian, Hebei, Liaoning, Jiangsu, Shandong and Zhejiang, with March to May and September to October being the seasons when swimming crabs are on the market. Abroad, swimming crabs are mainly produced in the Red Sea, Malaysia, Korea, Japan and other places.

2. What is the wholesale price of swimming crabs per jin?

Swimming crab wholesale prices vary, mainly because of differences in individual size, sex and plumpness. For example, plump female crabs with visible roe weighing more than half a jin each sell for about 120-150 yuan per jin; plump male crabs and female crabs without roe weighing more than half a jin each sell for about 80-100 yuan per jin; plump female crabs with visible roe weighing more than three liang each sell for about 80 yuan per jin; plump male crabs and female crabs without visible roe weighing more than three liang each sell for about 60 yuan per jin, so the exact price depends on which crabs you buy. However, according to recent market conditions, at the Xinfadi Agricultural Products Wholesale Market in Fengtai District, Beijing, the market wholesale price of swimming crabs is 235 yuan/kg, and at the Weihai Aquatic Products Wholesale Market in Shandong Province the wholesale price is 100 yuan/kg, so the exact price still has to be checked at markets in each area. 3. How do you steam swimming crabs?

Ingredients: swimming crabs, ginger, Sichuan pepper, scallion, rice vinegar, white sugar, salt, light soy sauce, yellow wine.

Method:

1. Clean the swimming crabs thoroughly, and cut the ginger and scallion into small sections for later use.

2. Add an appropriate amount of water to a steamer, put in the swimming crabs, Sichuan pepper and ginger slices, and steam over high heat for about 15 minutes. If the individuals are very large, extend the steaming time according to the actual situation.

3. Mix light soy sauce, vinegar, yellow wine, white sugar, salt and so on together into a dipping sauce, then take out the swimming crabs and dip them in the prepared sauce to eat.

4. How do you wash swimming crabs clean?

1. Sprinkle an appropriate amount of water and baijiu into a basin, then put in the swimming crabs and soak for about 15 minutes, so that the dirt inside the swimming crabs is quickly expelled.

2. Pour out the dirty water, then pour in an appropriate amount of clean water, and use a toothbrush to scrub every part of the swimming crabs. When scrubbing, try to carefully brush the 8 legs, the crab claws and the areas around the crab shell, to prevent dirt from hiding in them.

5. Are male swimming crabs better or female ones?

Like most crabs, swimming crabs are divided into male and female, and generally female swimming crabs taste better in September, while male swimming crabs taste better in October. This is because in September female swimming crabs have more crab roe, and in October male crabs have more crab roe, so when eating them, try to follow this timing.
