What Are Razor Clams? Two Methods to Remove the Viscera
Razor clams, also known as bamboo locusts and razor clam kings, are a common seafood in China. They are deeply loved by people for their high nutritional value and plentiful, delicious meat. They are currently sold in markets, and the price is a little on the expensive side. So what are razor clams? How do you remove the viscera?
1. What are razor clams?
1. Razor clams are bivalve mollusks of the class Lamellibranchia, order Eulamellibranchia, family Solenidae. They have two equal-sized shells, elongated and flat-rectangular in shape, about 4-8.5 cm long, pale brown or yellow-green in color, thin and brittle, with a concave groove running from the umbo to the ventral margin. Inside the shell is a piece of razor clam meat, milky white in color. Once the shell closes, small openings appear at the front and rear ends, extending the foot opening and siphon to draw in water currents, feed on food, or expel feces.
2. Razor clams, also known as constricted tagelus, grow in seawater. Because of their good taste and high nutritional value, they have become one of the common seafood foods on the market. They are currently widely distributed in shallow sea sandy beaches, muddy sand beaches, and seabeds along the coastal areas of northern and southern China, and are a popular seafood specialty of Ningbo. They are an important cultured species in the coastal areas of Zhejiang and Fujian.
3. Razor clams are an aquatic animal with high nutritional value, rich in protein, vitamin A, calcium, iron, selenium, and other elements. They have the effects of clearing heat and detoxifying, tonifying deficiency, and benefiting the kidneys. They are very suitable for the elderly, pregnant women, and people with a weak constitution or damp-heat constitution. However, people with a yang-deficient constitution are best advised not to eat them to avoid causing discomfort.
4. Razor clams are a seafood, a cold-natured food, and also a triggering food, so people with a cold constitution or allergies to seafood are best advised not to eat them, to avoid allergic reactions such as itchy skin and rashes.
2. How do you remove the viscera from razor clams?
Generally speaking, the viscera of razor clams can be eaten, but if the razor clams are relatively large, it is best to remove the viscera before eating, because the viscera of razor clams contain heavy metals, sand, excrement, and so on. Eating them will seriously affect the taste and also accumulate heavy metals, harming the body. So do not cut corners; the specific methods for removing the viscera are as follows:
Method 1: Blanch with cooking wine
Step 1: Rinse the purchased razor clams under running water several times, then pour an appropriate amount of cooking wine into a pot and bring to a boil.
Step 2: Put the razor clams into the pot and blanch them in the boiling cooking wine until all the razor clams open, then remove them and place them in ice water.
Step 3: Remove the razor clam shells, then use a knife to cut open the intestinal gland, remove the sand and black edges inside, and finally rinse clean with water.
Step 4: Put the razor clams into a bowl, add an appropriate amount of salt or flour and rub them, then rinse clean.
Method 2: Pick them out while eating
Although the viscera of razor clams can be picked out while eating, the prerequisite is to first remove the sand inside. The specific steps for removing the sand are as follows:
Step 1: Wash the razor clams clean and put them in a basket, then place them in a basin with water covering the razor clams, and pour in an appropriate amount of salt.
Step 2: Place a few chopsticks at the bottom of the basin, then add a few drops of sesame oil to the water, and leave for about 2 hours. At this point, the razor clams will spit out the sand inside.
Step 3: Cook the razor clams by heating or pan-frying, then when eating, directly pick out the black parts.
The above is a detailed introduction to what razor clams are and how to remove the viscera. We hope it is helpful to everyone.
