What are the ways to store fresh oysters in the shell?
Scrub them clean with clean water, then put them in a basin filled with clean water, and add a few drops of sesame oil to keep them for one or two days; or add some salt to the fresh oysters, wrap them well with plastic wrap and place them in the refrigerator's crisper compartment.
Ways to eat oysters are as follows:
1. Pan-fried oysters with egg
(1) Soak minced ginger in rice wine to make ginger juice wine;
(2) Mix the beaten egg with refined salt and monosodium glutamate and stir until foamy;
(3) Wash the fresh oysters clean, pat dry with a towel, add the ginger juice wine, pepper and sesame oil and mix well, then pour in the egg mixture to make the egg batter;
(4) Heat a wok over medium heat, add oil and heat until it just begins to bubble, pour in the egg batter, and fry over low heat until both sides are golden brown and cooked through, and it is done.
2. Charcoal-grilled oysters
(1) Pry open the live oysters, wash the oyster meat and one half of the shell clean with clean water, and drain the oyster meat for later use;
(2) Charcoal-grilled oysters can be roughly divided into three flavors: garlic, black bean sauce, and original.
Garlic sauce: Chop the garlic; if you like it spicy, you can add some chopped red chili. Mix the minced garlic and minced chili with oil, add salt and monosodium glutamate (or chicken essence) and mix well; use a slightly larger amount of salt.
Black bean sauce: Chop the fermented black beans and chop the garlic; you can also add chopped chili, and mix well with oil, salt, and so on.
(3) Place the cleaned half shells on the charcoal fire, put one piece of oyster meat on each shell, and add the above sauces while grilling; for the original flavor, just brush a little oil on the oyster meat and sprinkle a little salt. After hearing a sizzling sound, turn the oyster meat over, add more sauce, and grill briefly.
3. Mushroom and seaweed oyster soup
(1) Soak the mushrooms, seaweed and oysters, and wash them clean;
(2) Add 1500 ml of clean water (about 6 bowls of water) to a pot, bring to a boil over high heat, add the mushrooms and ginger, then after it comes to a boil, turn to low heat and simmer for 15 minutes, add the oysters and seaweed, simmer briefly until cooked, and season with an appropriate amount of salt and oil.
Although oysters can be eaten raw directly, because environmental pollution is now relatively serious, oysters bought in the market are best eaten after being cooked thoroughly.
