The enoki mushroom is one of the edible fungi cultivated artificially relatively early in China. It is delicious, rich in nutrients, and packed with various amino acids and other nutrients the human body needs, making it one of the edible fungi consumers quite like. But what should be noted when cultivating enoki mushrooms? Come take a look with the editor.

1. Temperature

The enoki mushroom is a low-temperature fruiting fungus. Its mycelium can grow in environments of 3-34 degrees, with the most suitable growth temperature between 20-30 degrees; when the temperature is below 5 degrees, growth is slow. The formation of its fruiting bodies requires an environment of 5-20 degrees, while the suitable temperature for primordium formation is 12-15 degrees; at around 13 degrees, fruiting body differentiation is fastest and the number formed is greater. Once the temperature is above 20 degrees, the fruiting bodies grow thin and weak, in fewer numbers, and dry out very easily, so attention must be paid to temperature changes during cultivation.

2. Humidity

Attention must also be paid to humidity changes during cultivation. When the water content of the growing substrate is 60%-65%, it is the period of fastest mycelial growth; if the water content is too high, the mycelium grows slowly and may even fail to extend into the substrate. During fruiting body growth, it is not advisable to spray water directly, so when mixing the substrate, 70% is best, while the air humidity of the mycelium culture room should be kept at around 60%. Once the humidity is too high, the chance of the spawn becoming contaminated increases, while the humidity of the mushroom house is best at 80%-90%.

3. Ventilation

The enoki mushroom is an aerobic fungus. During fruiting, sufficient oxygen is essential; otherwise it cannot fruit normally. After the fruiting bodies form, the diameter of the caps decreases as the carbon dioxide concentration in the mushroom house increases, so ventilation must be strengthened during cultivation to ensure sufficient oxygen. Once the carbon dioxide content in the air exceeds 1%, it will inhibit cap development, and once the carbon dioxide concentration exceeds 5%, stipe development will be affected.

4. Light

The enoki mushroom is a light-averse fungus. Its mycelium can only grow normally in a dark environment, and the young primordia also need to be in a dark environment. However, the formation and maturation of its fruiting bodies require certain light conditions. During the fruiting body formation stage, with strong light, the stipes are short, the caps open and flatten quickly, and the fruiting bodies are darker in color; with weak light, the fruiting bodies are lighter in color and better in appearance.
