When it comes to shiitake mushrooms, most people are more than familiar with them, but when it comes to flower shiitake, not many people know about them. Flower shiitake is deeply welcomed by people at home and abroad for its rich nutrition and its effects in preventing disease, promoting fitness and delaying aging. So what is the difference between flower shiitake and shiitake? How much money per jin? In fact, flower shiitake is a type of shiitake, but its nutritional value is much higher than that of shiitake, and it has the reputation of being the star among fungi. Flower shiitake is easily formed under relatively dry air and relatively low temperature conditions. However, the price difference between shiitake and flower shiitake is still relatively large; flower shiitake has relatively high nutritional value and relatively high commercial value, and correspondingly the selling price of flower shiitake is also relatively high. We can produce more flower shiitake by controlling environmental conditions.

The difference between flower shiitake and shiitake

Difference in category

1. Flower shiitake is a variety of shiitake, and also a superior grade among shiitake. Flower shiitake has long had the reputation of “mountain treasure”, because the caps of flower shiitake are especially large, the mushrooms are also very thick, and flower shiitake has a relatively low water content and a very long storage life. Therefore, flower shiitake is a particularly natural delicacy, so it is called a top-grade mushroom.

2. The formation of flower shiitake occurs when, during the production process of shiitake, natural conditions such as temperature, humidity, light and ventilation are controlled to artificially alter the normal growth and development of shiitake, causing the cap to form a pattern of alternating brown and white markings. However, flower shiitake has relatively high requirements for growing conditions; if the growing conditions are not met, it is very easy to fail. Therefore, flower shiitake is rarer than shiitake, and the price is also more expensive.

3. Flower shiitake is called flower shiitake because it cracks open by itself at a certain temperature and, after being dried in the sun, becomes like a flower, and flower shiitake tastes much better than shiitake, and is also comparable to bird's nest and shark fin. The difference between flower shiitake and shiitake can also be seen from the appearance, especially on the top of the mushroom cap; it can be known at a glance. The lines on flower shiitake are especially large, which is caused by the cracking of the cap top.

How much is flower shiitake per jin

There is more flower shiitake on the market now, so the price is relatively not as high as before. Around the 1990s, flower shiitake was all naturally formed, the quantity was very small, and its price was more than five times that of regular shiitake. However, because there is currently a relatively large amount of flower shiitake, its price is about one times higher than ordinary shiitake.

The market price of fresh flower shiitake is about 6 to 12 yuan per jin, and the market price of dried flower shiitake is about 60 to 150 yuan per jin. Flower shiitake is a superior grade among shiitake, and according to different qualities it is divided into three major categories: wild, wood-based artificially inoculated, and bag-cultivated mushrooms, and each category is further divided into three types: flower shiitake, thick shiitake, and flat shiitake, generally divided into three grades. Grade one is flower shiitake; each flower shiitake is only as big as a copper coin, is flowered all over, has thick and plump mushroom flesh, is fresh and tender, has a rich fragrance, and has a complete cap with white cracks tinged with slight yellow, shaped like chrysanthemum petals. This is formed after the mushroom surface is frostbitten and then healed again under sunlight, so it is also called chrysanthemum mushroom.

Where are the producing areas of flower shiitake

1. Henan: Henan Province is a major province for flower shiitake production in China, distributed in Xixia County, Nanzhao County and Neixiang County of Nanyang City, Lushi County of Sanmenxia City, and Biyang County of Zhumadian City, among which Xixia County is the largest shiitake producing area in the country.

2. Zhejiang: In Zhejiang Province, the flower shiitake producing areas are most numerous in the Lishui region; Qingyuan and Longquan mainly focus on drying, while Lishui, Suichang, Pan'an and other counties and cities mainly focus on fresh sales.

3. Fujian: Fujian Province is a major original flower shiitake province in China, with cultivation in many counties and cities across the province, but in recent years it has decreased substantially, and its total volume accounts for a relatively small share in the country.

4. Hubei: Hubei Province is one of the main flower shiitake producing areas in China, among which Suizhou has relatively better flower shiitake yield and quality.

5. Shaanxi: Shaanxi Province is a major traditional flower shiitake producing province, but the mushroom volume has been declining year by year, and in the previous two years bag-cultivated mushrooms developed relatively quickly.

6. Hebei: Hebei Province has seen great development in flower shiitake in recent years, mainly focusing on fresh sales; because it is mainly fresh mushroom sales, it has little impact on dried mushrooms.

How to select flower shiitake

When purchasing edible mushroom products, it is best to buy products produced by enterprises with a certain reputation at relatively large shopping malls or supermarkets, and check whether the contents on the packaging such as factory name, factory address, net content, production date, shelf life, product standard number, and quality grade are complete; conduct a simple sensory inspection of the product through the three steps of “looking, smelling, and holding”.

1. Looking: mainly look at the shape and color and whether there is any mold rot or insect damage. Shiitake is generally considered good when the body is round and neat, the impurity content is low, the cap is thick and plump, and the cap surface is smooth. Shiitake can be divided into grades one, two, three and ordinary according to different cap diameters, among which the cap diameter of grade-one shiitake must be above 4.0 cm.

2. Smelling: good-quality edible mushrooms should have a pure, natural aroma without off-odors; do not buy products with a pungent smell. If fresh edible mushrooms smell sour, they may have spoiled and are not suitable for eating.

3. Holding: when purchasing dried edible mushrooms, choose products with relatively low water content; if the water content is too high, it will not only weigh more but also be difficult to preserve. If the stem of shiitake feels hard when pinched by hand and the cap immediately puffs back up as before after release, then the quality is relatively good.

How to store flower shiitake

1. Dried edible mushrooms should not be soaked in warm water before use, otherwise it will ruin the taste of the product.

2. Place in a ventilated, breathable, dry and cool place, and avoid prolonged exposure to sunlight. Dried edible mushrooms generally easily absorb moisture and become moldy, so edible mushroom products should be stored dry. For example, place an appropriate amount of lump lime or dry charcoal in the storage container as a moisture absorbent to prevent dampness.

3. Store sealed. Edible mushrooms are rich in nutrients and easily oxidize and deteriorate. They can be stored in sealable containers such as iron cans and ceramic jars, and the container should be lined with a food bag. Usually, open the container mouth as little as possible, and when sealing, pay attention to expelling the air in the lining bag.

4. Store separately. Most edible mushrooms have strong adsorption, so they should be stored separately to prevent odor transfer.
