Crisp persimmon is one of the most common fruits of the autumn and winter seasons, generally starting to hit the market in October. Unlike soft persimmons, it has both the fragrance of a persimmon and the fragrance of an apple, so many people like to use it to make dried persimmons, persimmon juice, honey persimmons, etc. So which season is the crisp persimmon a fruit of? Is it just an unripe persimmon? When does it ripen?

The crisp persimmon is not an unripe persimmon. It is also known as Gongcheng moon persimmon, Gongcheng water persimmon, rice fruit, and monkey jujube. It is produced in the area of Gongcheng, Pingle and Yangshuo counties in Guangxi. The fruit is large, weighing 160-250 grams, with large fruits weighing 400-500 grams; it is oblate, golden yellow, with a broad flat top, a slightly sunken top point, a faint cross-shaped groove that is not obvious, a small stem, and sepals that curl upward. The crown is somewhat low and short, the branches are relatively short, and the leaves have wavy wrinkles. It is one of Guangxi's traditional famous and superior export products that earn foreign exchange, and it has a cultivation and processing history of more than 400 years in Gongcheng, with the main producing area being Lianhua Town.

Crisp persimmons are the same as ordinary persimmons, except that during the “tanning” process crisp persimmons do not use warm water but use cold water entirely. The so-called “tanning” means soaking. Soaking persimmons in cold water takes longer. Soaking them in warm water takes a very short time before the persimmons can be eaten, but the soaked persimmons are soft, not crisp. In addition, whether crisp or soft persimmons are peeled does not matter; either is fine, provided that hygiene is ensured.

Crisp persimmon market time

Crisp persimmons come to market in autumn. The season when persimmons ripen is generally in October, though it depends on the variety; generally small round persimmons are about ready by the Frost's Descent solar term. Large flat persimmons are a bit later. China Eating Network reminds you not to wait until they are ripe and soft, and to pick them when they have all turned yellow. After being left for a week they will all become soft. Then they can be eaten, but be careful not to eat too many. Do not drink alcohol, as you may easily get persimmon stones or constipation.
