Where is the production area of Shandong scallions? Introduction to the distribution of the main production areas
The production areas of Shandong scallions are spread throughout Shandong Province. Famous Shandong scallion production areas include Anqiu in Weifang City, Zhangqiu in Jinan City, and Caoxian in Heze City. Scallions are rich in nutrients, containing carbohydrates and minerals such as sulfur, phosphorus, and iron, as well as various vitamins, and have a distinctive aroma and pungent taste.
The scallion that Shandong people prefer to eat is the Zhangqiu scallion. A Guide to Shandong Specialty Flavors (edited by Zhang Lianming) describes its characteristics as: “The stalk is long and thick, the white part of the scallion is plump, crisp, and tender, with a mild spiciness and a slight sweet and refreshing taste. The stalk is 3 to 5 cm thick and weighs more than one jin.” There are many ways to use scallions in cooking, such as eating raw scallions dipped in sweet bean sauce and wrapped in a pancake, which is the most famous dietary preference of the people of Shandong; in addition to being eaten raw, Shandong cuisine includes many famous dishes in which scallions are the main ingredient or an auxiliary ingredient, such as “Braised Sea Cucumber with Scallions,” “Braised Beef Tendon with Scallions,” “Quick-Fried Pork with Scallions,” and “Braised Fish Maw with Scallions”; in addition, foods that use scallions as a seasoning are also quite abundant, such as “scallion oil,” “scallion and pepper paste,” and “scallion oil Shaoxing wine,” among others.
