Yixing famous tea is a local specialty of Yixing, and what is mainly packaged is green tea, generally Biluochun, Yangxian Xueya, or Jingxi Yunpian.

2. What teas does Yixing have

Yixing is an oasis of tea, with more than 3500 hectares of tea gardens. Yixing was called Yangxian in ancient times, so Yixing tea is also called Yangxian tea. Green tea and black tea are mainly produced here. Green teas mainly include Biluochun, Yangxian Xueya, Jingxi Yunpian, Maojian, and so on; black teas include Zhuhai Jinming, Yeshanhong, and so on.

3. Steps of Yixing tea ceremony

1. Appreciating the tea: Pour the tea directly from the tea caddy into the tea holder, and then a designated person presents it in front of the tea taster to view the shape of the tea

2. Warming the pot: Pour hot water into the pot until it is half full, then pour the water in the pot out into the tea tray.

3. Placing the tea: Push the tea leaves from the tea holder into (place them in) the pot.

4. Warming and moistening brew: Pour water into the pot until full, cover the pot lid, and immediately pour it into the tea sea or tea caddy. This allows the tea leaves to absorb temperature and moisture, putting them in a state of being ready to bloom, which helps the character of the first brew to emerge.

5. Warming the tea sea: Pour the water from the warming and moistening brew into the tea sea to warm it.

6. Warming the cups: Use the tea water in the tea sea to warm the teacups. Whether the cups are warmed or not affects the temperature when the tea soup is poured, with a difference of about 3-5°C.

7. First brew: Pour hot water at a suitable temperature into the pot, with the time depending on the tea being brewed.

8. Drying the pot: Pick up the teapot, first touch the bottom against the tea towel to wipe away the water droplets on the bottom of the pot.

9. Pouring the tea: Pour the tea soup into the tea sea (tea caddy).

10. Dividing into cups: Pour the tea water from the tea sea (tea caddy) into the teacups, preferably to eight-tenths full.

11. Removing the residue:

(1) First clean the pot lid;

(2) Use a residue spoon to remove the used tea leaves from the pot.

12. Washing the pot: Pour water into the pot to about one-half full, and remove the remaining tea residue.

13. Pouring out the residue: Pour the remaining residue into the sink.

14. Pouring out the water: Pour away the water in the tea tray.

15. Restoring: After the guests leave, remove the residue, wash the cups, wash the pot, and put everything back in place for next time.
