II. Vegetable Types
1. Heat-loving vegetables
(1) Heat-loving vegetables generally cannot withstand frost and need to be planted after the spring frost has passed and the temperature has steadily warmed.
(2) Because these vegetables grow a bit more slowly than cold-loving vegetables, they can be planted earlier, giving them plenty of time to grow.
(3) Common heat-loving vegetables in everyday life include: amaranth, water spinach, edamame, pumpkin, cucumber, bottle gourd, sweet potato, peanut, green beans, tomato, various kinds of common beans, etc.
2. Cold-loving vegetables
(1) Cold-loving vegetables generally need to grow in a cool environment during the seedling stage, and frost during the mature stage can enhance their flavor, but they are not very heat-tolerant, for example celery, cilantro, onion, scallions, Chinese chives, cauliflower, lettuce, celtuce, carrot, napa cabbage, white radish, head cabbage, cauliflower, etc.
(2) Fast-maturing cold-loving vegetables can be planted in spring whether in the south or the north, for example lettuce, bok choy, Shanghai bok choy, cherry radish, etc.
3. Cold-hardy vegetables
(1) Cold-hardy vegetables are relatively tolerant of cold during the seedling stage and can safely overwinter, but they still need warm weather for later growth.
(2) They are generally planted before the first frost, and once the weather warms up the following spring they can continue growing. Common cold-hardy vegetables include: rapeseed greens, asparagus, shepherd's purse, broad bean, peas, and so on.
